Here’s another sweet treat recipe for apple and cinnamom muffins. Another fruit, like the banana, that can sometimes hang around the house for a while.
Instructions
- Preheat oven to 190°C. Spray muffin tins with bakers spray or use muffin cases; that is what I tend to do so I can get some that are cute and themed.
- Sift together flour, baking powder, salt, and cinnamon in a bowl.
- Next coat the apples with 1/2 teaspoon ground cinnamon and 2 teaspoons all-purpose flour in a separate bowl.
- Cream together the butter and sugar by beating with a mixer (or vigorously by hand) until pale. Add an egg, one at a time. Mix in the vanilla.
- Fold in the flour mixture, alternating with milk. Stir until just combined. Fold in the apples and fill up the muffin cases.
- Cook for 30 minutes, and let them cool down before eating.
